I've always loved Mexican food. Tacos, nachos, chimichangas, rice and beans, it's all delicious. But my Grandma took tacos to a new level. She took small corn tortillas and fried them in oil. Top them with fresh ground beef seasoned with the perfect spices, lettuce, tomatoes, salsa and sour cream, and you have a recipe for greatness and memories made for a lifetime.
I make tacos from time to time now, and every time I do, I think of my Grandma frying tortillas in the kitchen, playing with my cousins, joking with my uncles, bonding with my Grandpa, puzzles with my Aunts and just good feelings and laughter filling the house.
I hope to make memories like this with my children and grandchildren throughout the rest of my life.
